Fluffy omelette with sausage


2 tbsp of olive oil/butter
2 eggs, yolk and whites seperated
5 button mushrooms, sliced
2 cherry tomatoes sliced
2 spicy chicken/pork sensation sausages, sliced
a handful of cheese, grated


Place the egg whites in a large mixing bowl and beat with an electric hand beater until stiff white peaks are formed.

They should have a meringue like consistency.

Separately in a frying pan, heat the olive oil and add the onion.

Once the onion has become translucent, add in the sliced sausage and cook until it has cooked through. Quickly add in the mushrooms, and cook until they have browned. Next add in the cherry tomato. After 2 minutes of cooking, set aside all the ingredients in the frying pan.

In a separate frying pan, heat with a little olive oil (or use a non stick frying pan). Take the whisked egg whites and quickly fold the egg yolks into the whites.

Immediately pour the contents into the hot pan; it should form a circle omelette and should look quick stiff. Pour in the earlier fried ingredient .

Sprinkle them on the top of the cooking egg evenly, and then sprinkle the handful of cheese over the top of the cooked ingredients.

Carefully take a spatula and lift the sides of the omelette and carefully fold the omelette in half.

Once you have done this, quickly flip the omelette over so both sides are golden brown.

Serve with a sprinkle of flat leaf parsley.
